Kadai Masala
Ingredients
- 1 Tablespoon coriander seeds
- 1/2 teaspoon black peppercorns
- 1 teaspoon cumin seeds
- 2 whole red chilies
- 2 whole cloves
- 2-3 green cardamom pods
- 3 black cardamom pods
- 1 cinnamon stick
- 1-2 bay leaves
Directions
Break the dried chilies into many pieces. Dry roast chilies and coriander seeds on a pan over low flame until fragrant, then remove from the heat.
Blend all of the ingredients together in a blender to a coarse powder. Use instantly in your dish or store in an airtight container for future use.
